и спиртов невиноградного происхождения

Реферат
Прикладная задача оценки качества вина и другой винодельческой
продукции, в особенности ее подлинности, является в настоящее
время одной из актуальных и приоритетных задач современной
пищевой аналитики и экспертизы, успешное решение которых
требует применения современных научных и методологических
разработок. Использование спиртов и /или сахаров
невиноградного происхождения является одним из недопустимых
способов манипуляций с составом продуктов переработки
винограда. Эффективное решение задачи по выявлению
сахаров и /или спиртов невиноградного происхождения
обеспечивается применением методологии масс-спектрометрии
отношений стабильных изотопов легких элементов (IRMS/SIRA).
В статье рассматриваются основные вопросы и рекомендации
по методическому обеспечению анализа стабильных изотопов
углерода, в т.ч. требования к оборудованию, подготовке проб
(экстрагирование и очистка этилового спирта и сахаров),
проведению измерения и экспертной оценке результатов.
Показано, что применение т.н. изотопного одноэлементного
исследования (ОЭИ), включающего анализ состава изотопов
углерода
13
С/
12
С в этиловом спирте и сахарах, позволяет получить
только частичный ответ на вопрос о присутствии в винодельческой
продукции сахаров и /или спиртов невиноградного
происхождения, т.к. данная методология не позволяет выявить
сахара и /или спирты, полученные из растений C3-группы (напр.,
сахарной свеклы, пшеницы, картофеля, ячменя, яблок и др.).
В отличие от ОЭИ применение мультиэлементного исследования
(МЭИ), включающего анализ изотопов трех элементов —
углерода

С/
12
С, кислорода
18
О/
16
О и водорода

Н, путем
комбинирования двух аналитических принципов —ядерного
магнитного резонанса (ЯМР) и масс-спектрометрии (IRMS/SIRA)
позволяет выявить все виды невиноградных компонентов,
включая спирты, полученные из целлюлозосодержащего сырья,
сульфитных щелоков и этилена.

Methodological and expertise questions of the evaluation
of wine products on presence of non-grape sugars and
alcohols

Abstract
Applied task of the evaluation of quality of wines and other wine
products, in particular its authenticity, is currently one of the most
urgent and priority topics of modern food analysis and expertise.
The successful solution of these topics requires the application
of modern scientific andmethodological developments. Use of
non-grape alcohols and/or sugars is one of inadmissible ways to
manipulate the composition of the processing products of grapes. The
effective solution of a task of identification of additions of non-grape
sugars and/or alcohols is provided with the application of the mass
spectrometry of ratios of stable isotopes of light elements (IRMS/SIRA).
The article deals with the main issues and recommendations for the
methodological ensuring of the analysis of stable isotopes of carbon,
including hardware requirements, sample preparation (extraction,
purification of ethanol & sugars), conducting of measurements and
expert assessment of results. It is shown that application of the so-
called Isotopic Single Element Approach (ISEA) including the analysis
of isotope ratios of carbon
13
C/
12
C in ethanol & sugars allows to get
only the partial answer to a question of presence of non-grape sugars
and/or alcohols in wine or wine products since this methodology
doesn't allow to reveal sugar and/or the alcohols obtained fromC3
plants (e. g., sugar beet, wheat, potatoes, barley, apples, etc.). Unlike
the ISEA the application of the Isotopic Multi Elements Approach
(IMEA), which includes the analysis of the isotope ratio of carbon
13
C/
12
C, oxygen
18
O/
16
O and hydrogen
2
H/
1
H, by combining of two
analytical principles— the Nuclear Magnetic Resonance (NMR) and
mass spectrometry (IRMS/SIRA) allows to detect all types of non-grape
components, including the alcohols received from cellulose containing
rawmaterials, sulphites waste liquor and ethylene.
