Basic trends

in the world production and consumption of biofuel

and perspectives for fat-containing raw material and meat

industry wastes processing into biodiesel

In the given article analysis of tendencies in the world produc-

tion and consumption of biofuel is given, prospects for use of

replenished vegetable and animal raw materials for processing

into biodiesel fuel are considered, and both positive and negative

aspects of its usage as alternative kind of fuel are presented.

A new view of frozen semi-finished products manufacture

Investigation results of cryoprotective action of phosphates,

common salt and sugars during pork freezing and storage are

presented.

Based on analysis of the data obtained, it was concluded that

usage of cryoprotective-action additives is perspective, as it

allows to maintain functional-technological and organoleptic

properties of meat, cut costs connected with losses during meat

defrosting, increase the output of finished products and produc-

tion profitability.

Studies on development of norms

for natural meat and meat products loss rates during

refrigeration treatment and storage

Problems of natural meat and meat products losses during

refrigeration treatment and storage, as well as trends of the nor-

mative base improvement and factors of the scientific-and-tech-

nical progress influencing its development and reduction of nat-

ural losses, are considered in the given article.

The main goal of commercial activities of any enterprise is to

maximize the gained profit. Only in this case the enterprise may

carry out full-valued investment policy, extend the programs of

production and social sphere development, and replenish the

circulating assets.

Principles of work organization that could become the basis

for a new approach to building of the plant efficiency manage-

ment system are considered.

It is recommended to use evaluation coefficients and criteria

as a measuring value.

Live mass dynamics

and slaughter indices of crossbred young bulls when using

Charole herd sires

Results of experimental investigations on the program of a

new-type high-productivity meat cattle development are pre-

sented.

Analysis of the findings showed that crossbred animals

exceeded their purebred analogues by all indices.

Unique protein from GK PTI

Information on properties of Pro-Vo R-Max protein offered by

PTI group of companies is provided. The process of meat granules

manufacture using it is described. The sphere of its usage in man-

ufacture of meat products, as well as its advantages, are shown.

development perspectives of meat industry in Ryazan

region». Rational use of raw materials and advanced

technologies of meat products

Information on the seminar-meeting of meat industry factory

managers of Ryazan region hold on the basis of OOO «Skopin

meat packing plant» is presented. The list of participants and

summary of papers presented by specialists from enterprises

and scientists-participants from the V.M. Gorbatov All-Russian

Meat Research Institute are given.

In February, 2008, in the V.M. Gorbatov All-Russian Meat

Research Institute the traditional seminar on the theme

«Realization of provisions of the Federal law “On technical regu-

lation” in meat industry» for specialists in standardization, certi-

fication and quality systems of meat branch took place.

Development of meat industry

in Ryazan region

Data on cattle and poultry production volumes in 2007, com-

pared to 2006, as well as meat and meat products (sausage

products, semi-finished products and canned meat) are pre-

sented. Measures carried out on technical reequipment and pro-

duction modernization of some enterprises; on quality improve-

ment of manufactured products and expansion of their assort-

ment, as well as on marketing improvement, are described.

Forecasts for further development of meat industry, stipulat-

ed by the program «Development of agro-industrial complex of

Ryazan region in 2008–2012», and tasks aimed at its realization

are presented.

Chamber «AGRO-THERM»: service experience

In 2004 company «AGRO-3» jointly with specialists from the

V.M. Gorbatov All-Russian Meat Research Institute carried out

industrial tests of the chamber «AGRO-THERM» in the produc-

tion conditions of ZAO «Mikoyanovsky meat packing plant» , with

the aim to determine a possibility of realization of technological

processes with regimes necessary for manufacture of finished

products.

In the given article service experience of the chamber

«AGRO-THERM» at some domestic meat packing plants is

described. Efficiency of technological processes and advisability

of technical solutions is confirmed in the practice of enterprises

that utilize the above chamber.

World cuisines

Information on peculiarities of Bulgarian, Czech, Slovakian,

Hungarian, German, Rumanian, Yugoslavian, Poland, French,

Italian and American cuisines is presented.

Recipes for main courses in pots

Recipes for main courses from mutton, beef, poultry and rab-

bit meat are given. Procedures for cooking dishes in pots are

described.
